ATUM Desserant – Comptempory molecular gastromy desserts

So I describe in my day 3 post before that it was my birthday and wanted to do something special. I found ATUM Desserant along Causeway Bay, they are big on the Heston style molecular gastronomy creating impressive desserts right in front of your eyes. The improvisation $348 for two lets the chef design your dessert and you can get them to write a message.

ATUM Desserant is located at the L square in Causeway Bay, taking a lift to level 16 in a sky-high building. We were lucky that we turned up without a booking and managed to get seated within minutes. There’s limited seating for small groups. The chef designated to you begins with asking what mat colour you want. This silicone mat is placed on the table and the chef starts designing your dessert. Pieces of lychee, orange, yuzu jelly blocks are placed along with mocha, matcha green tea brownies, and candy floss. The wow moment was when the chef starts mixing the ice cream rocks in a metal bowl with nitrogen and smoke fills the air.

Although the desserts didn’t quite meet the taste expectations ATUM desserant is certainly a place to visit for the sheer experience.
